Southwest General Health Center purchased a Serving Kitchen from Toska Foodservice Systems, Inc. in January 1998. The Deli is operated as an alternate location to the main cafeteria for staff and guests and is under the management of Dolly Strenko (SFM Member).


The menu features deli-style sandwiches, soup, salad, fresh fruit and their own signature pizzas. Self-serve bottled beverages are also available.


The Deli is open from 10:00AM to 12:00AM seven days a week for eat-in or carryout. However the original concept for the Deli was quick serve, carryout food. The Deli has become so popular that the customers are choosing to eat in.


Using our financial analysis program, we provided Ms. Strenko revenue and operating projections based on variables given by her. After almost four months of operation, she compared our revenue projections to actual sales figures and other operational. The revenues projections were right on track. Return on investment bettered our estimate of six to eight months.


What attracted Ms. Strenko to the Serving Kitchen was the efficient use of space and the flexibility to be able to modify operations if patron acceptance was not what they anticipated. She had been given a small room to convert into the Deli on a trial basis. The extended pizza model has a footprint of only 210 sq. ft. The efficiency doesn’t stop there. It only takes two people to operate it per shift. The best news yet is that the food service staff and the customers love it!
